Unless you have been to South America or in fact a South American restaurant somewhere in the world, you may not have heard of Chimichurri (origin of interesting name unknown). It’s a green sauce which is used as an accompaniment to grilled meat, this usually steak.
It is made from combining garlic (minced), parsley, oregano, olive oil and either white or red vinegar. And it tastes delicious!
Extra flavourings which may be used are paprika, chili, onion, thyme, cumin, coriander, lemon, basil and maybe even a bay leaf. If you want to add some colour, notably red – tomato and pepper can also be added.
It can also be used as a marinade.
